I started cooking seriously the way most people do, which is badly and out of necessity. Somewhere between the third burnt chicken and the fortieth night of the same four meals, I got curious about why things work. Why a dry surface browns and a wet one steams. Why the salt goes in early. Why the restaurant version tastes different from mine when the ingredient list is identical.
Turns out the answers are not complicated. Nobody just explains them. Recipes tell you to do a thing without telling you what the thing is for, so the first time something goes sideways you have no idea which lever to pull.
What this site is
Every recipe here answers the why. There is a section on every page called Why This Works, and it is the most important part. Learn five of those and you stop needing recipes for half of what you cook.
The rest is practical. Recipes scale to your table, because a recipe for four is useless when you are feeding seven. They print to a clean one page card with no ads and no photos, because the phone screen goes dark exactly when your hands are covered in raw chicken. And most of them tell you what to swap, because the recipe should bend around your fridge instead of sending you back to the store.
How the recipes get tested
I cook everything on this site in a normal home kitchen with a normal home stove, usually with at least one kid asking for a snack. If a recipe only works with a commercial burner or a $400 pan, it does not go up. If the timing only works when nothing else is happening, I rewrite it until it survives a real evening.
The waste thing
Roughly a third of the food an American household buys ends up in the trash. That is real money, every week, in the garbage. A big chunk of this site is about the opposite habit: look in the fridge first, cook what is closest to turning, and keep a handful of flexible formulas that will take whatever you have.
